Eggplant Parmesan from Cooking Light- yummy!

Recipe Ingredients for Eggplant Parmesan

1/4 c white wine
1 1/2 tsp oregano
1 1/2 tsp basil
16 oz tomato sauce
14 oz whole canned tomatoes
3 oz tomato paste
1 garlic clove, minced
1 pound eggplant
2 egg whites
1 c Italian bread crumbs
4 tbsp Parmesan
6 oz shredded part skim mozzarella cheese

Recipe Directions for Eggplant Parmesan

Combine first seven ingredients in a large saucepan and bring to a boil. Reduce heat and simmer uncovered 20 minutes. Slice eggplant into 1/4" slices and place in large bowl of cold water for 30 min.Drain well and blot dry with paper towels. Combine 3 Tbsp water and 2 egg whites, mix. Combine bread crumbs and 2 Tbsp Parmesan cheese, stir well, Dip eggplant in egg white mixture and dredge in bread crumbs. Place half of eggplant on cookie sheet sprayed with Pam and broil 5 min on each side or until browned. Repeat procedure with remaining eggplant. Set eggplant aside. Spread 1/2 of tomato sauce mixture into bottom of a 9x9 baking dish. Arrange half of eggplant over sacue and top with 1/2 of the mozzarella cheese. Repeat layers with remaining sauce, eggplant and cheese. Sprinkle top with 2 Tbsp Parmesan cheese. Bake uncovered 350 for 30 min or until bubbly. Let stand 5 minutes before seving.
