Recipe Ingredients for Eggplant Parmesan

1 large eggplant
4 egg whites
1/4 teaspoon salt
2 slices rye bread
1/3 cup grated Parmesan
1 clove garlic
1 cup nonfat ricotta cheese
2 cups mozzarella cheese
3 cups tomatoes
2 teaspoons vegetable oil
1 medium onion
3 tablespoons basil
1 green pepper

Recipe Directions for Eggplant Parmesan

Slice eggplant into 1/4 inch rounds. Mix egg whites with salt, place in flat dish. Crumb rye bread and mix with garlic and parmesan, place in second flat dish. Dip eggplant in eggs, then crumbs, and place on sprayed baking sheet. Bake 350 degrees for 20 minutes per side. Meanwhile, saute the onions in oil. Add green pepper. When tender, add tomatoes and basil, simmer for 20 minutes. Place 1/2 of sauce on bottom of 9x13 inch pan, top with 1/2 the eggplant slices, then spread the ricotta on top. Layer eggplant, remaining sauce, and then top with cheese. Bake at 350 for 30 minutes, uncovered, until bubbling.
