Eggplant Parmesan Recipe

I really use Kradt fat free shredded mozzarella. CC could not find so I used the cheddar which are the same counts.

Recipe Ingredients for Eggplant parmesan

1 medium eggplant
11 ounces marinara sauce
1/2 cup fat free ricotta cheese
1 tbsp grated cheese
163 grams kraft fat free cheddar cheese

Recipe Directions for Eggplant parmesan

  1. slice and peel eggplant

  2. spray cookie sheets and eggplant slices with olive oil pam

  3. bake at 450 degrees until golden, flip over spray and repeat time.

  4. pour marinara sauce bottom of pan, 1 layer of eggplant

  5. one lite layer of ricotta

  6. shredded cheese, more sauce, another layer of eggplant, then sauce and both cheese.

  7. Bake at 375 for 30 minutes. I mixed 1/3 of a beaten egg and parsley, italian seasoning, salt and garlic salt into the ricotta .
