Recipe Ingredients for Eggplant Parmesan

3 tbsp grated Parmesan cheese
2 tsp Italian herb seasoning
1/4 tsp salt
1/4 tsp black pepper
1 medium eggplant, cut into 1/2-inch slices
2 tbsp olive oil
1/2 cup pasta sauce, heated
1/2 cup shredded part-skim mozzarella cheese
1 tbsp chopped fresh Italina parsley or basil

Recipe Directions for Eggplant Parmesan

  1. Combine Parmesan cheese, Italian herb seasoning, salt and pepper in small bowl. Brush eggplant slices with oil and sprinkle the herb mixture on both sides of the slice.

  2. Place eggplant on greased grill over medium-high heat. Close the lid and grill for about 15-20 minutes, turning once, until tender. Place the eggplant in shallow dish. Pour pasta sauce over top and sprinkle with mozzarella and parsley.
