Recipe Ingredients for Eggplant Parmesan

1/4 cup olive oil
1 1/2 pounds eggplant
24 oz. marinara sauce
4 oz. mozzerella cheese, shredded
1/2 cup parmesan cheese, shredded

Recipe Directions for Eggplant Parmesan

  1. Preheat oven to 375. Pam a casserole 2-qt dish.

  2. Slice eggplant into 1/3" rounds. Sprinkle with salt and let sit 30-60", then blot dry.

  3. Preheat the broiler. Brush both sides of each round with olive oil and broil 5-6" from teh heat until browned, then flip and brown the other side. Remove and season lightly with salt and pepper. Don't worry if it looks dry.

  4. Warm the tomato sauce with half the basil. Spread about 1/2 of the sauce over the bottom of the dish, then make an overlapping layer of eggplant. lay the mozzarella over the top, add the rest of the basil, and sprinkle with the Parmesan. Add the rest of the eggplant adn cover it with the remaining sauce. Bake in the middle of the oven untill bubbling and hot throughout, about 30".
