Recipe Ingredients for Eggplant Parmesan

1 medium Eggplant
1 c Bread Crumbs
2 T Parmesan Cheese
1 t parsley
1 t oregano
1 t garlic powder
1 t basil
1 egg white
1 1/2 c Pasta Sauce
6 oz Part-Skim Mozzarella Cheese

Recipe Directions for Eggplant Parmesan

Slice eggplant into 1/2" slices. Combine bread crumbs, herbs and cheese in bowl. Dredge eggplant in egg whites, then bread crumb mixture. Bake slices on cookie sheets 15 minutes or until crisp. Place 1/3 of pasta sauce in bottom of 9X13 pan and spread to coat. Place first layer of eggplant slices. Place 1/3 of pasta sauce on top of slices then cover with mozzarella cheese. Repeat until all slices of eggplant are used. Bake in 350 oven 20 minutes.
