A crispy disc of eggplant surrounded in a zesty tomato sauce with parmesan and mozzarella cheese.

Recipe Ingredients for Eggplant Parmesan

2 eggplant,+yield+from+1-1/4+lb eggplants
3 cups Panko Breadcrumbs
1/4 cup vegetable oil
1 teaspoon salt
3 eggs
1/4 cup flour
2 cups g) Prego spaghetti sauce
14 oz. shredded mozzarella cheese
6 oz shredded parmesan cheese

Recipe Directions for Eggplant Parmesan

  1. Clean eggplants and slice crosswise at 3/4 inch. Lay on paper towels and sprinkle lightly with salt.

  2. Meanwhile, make some sauce, don't use that silly canned stuff like the recipe states. (had to use it to get analyzer to accept it)> START with shredded carrot (2 med), 1 shredded onion (med) 2 cloves garlic crushed, and vegetable oil or EVOO. Add 3 T basil and 2 T oregano. Saute until herbs begin to scent then add tomato paste (2T) 28 oz can tomato sauce and 2) 28 oz. diced tomatoes. Add 2 T sugar and a pinch of chili flakes. Simmer on low for 1 hour, then puree with immersible blender.

  3. Prep the eggplant breading station by laying out 3 containers/bins. Place flour and salt & pepper in first bin, eggs beaten with 2 T water in the middle bin and panko in the end bin. Dip left to right then saute in frying pan with plenty of oil. Drain on paper towels and remove any burned crumbs before adding more prepared eggplant slices. Layer eggplant and sauce with cheese in large casserole dish. Heat at 350 for 40 minutes. Remove and let cool 15 minutes, then serve. Enjoy!
