Baked breaded eggplant covered in tomato sauce and mozzarella cheese

Recipe Ingredients for Eggplant Parmesan

1 eggplant
1 cup bread crumbs
2 eggs
1/2 cup flour
2 cans tomato paste
1 cup,+chopped+or+sliced stewed tomatoes
1 tablespoon basil
2 teaspoons oregano
5 garlic cloves
2 cups water
1 tablespoon crushed red pepper
1 tablespoon olive oil
1 1/2 cups mozzarella cheese (shredded)

Recipe Directions for Eggplant Parmesan

  1. Peal and slice eggplant in 1/2 slices

  2. In 3 separate bowls place bread crumbs, flour, and eggs. Beat eggs lightly. Dip sliced egg plant in egg, than flour, then egg again, then bread crumbs. Place on cookie sheet. Repeat until all eggplant is breaded. Bake on 375 for 20-30 minutes or until tender inside and golden brown outside.

  3. In a sauce pan heat oil, add garlic, and all dried seasonings. Stir constantly so that the herbs do not burn. Add tomatoes and water. Simmer for about 30 minutes on medium-low heat. Pour sauce over eggplant and top with mozzarella cheese. Sever over pasta.
