Eggplant Parmesan Recipe

Thanks Hungry Girl! I added spinach to the mix, but this is a version of eggplant parmesan thats baked not fried and uses fiber one cereal instead of bread crumbs! Yum!

Recipe Ingredients for Eggplant Parmesan

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 cup Original
1 dash Pepper, Black
0.67 tsp Garlic Salt
1/4 tsp Italian Seasoning
1 1/2 cup Spinach
1 1/2 cup Pasta Organic Tomato and Basil Italian Sauce
3/8 cup Shredded Mozzarella Cheese
3/8 cup Freshly Shredded Parmesan
2 large Egg, Whole

Recipe Directions for Eggplant Parmesan

  1. Preheat oven to 375

  2. *Thaw frozen spinach while preparing dish*

  3. Take 1C Fiber One cereal, 2/3Tsp Garlic salt, 1/8Tsp pepper, and a dash of italian seasonings and blend to breadcrumb consistency.

  4. Crack 2 eggs and blend in a separate dish, prepare your breading station.

  5. Dice eggplant into 12 1/2 inch slices, pat each slice with a paper towel to remove excess moisture

  6. Spray a cookie sheet with non stick cooking spray, and, after coating each eggplant slice with egg and then crumbs, place on baking sheet.

  7. Bake for 30 minutes, then flip slices over and bake for another 10 minutes, each side should be browned.

  8. Prepare your serving plates by layering as follows:

  9. 1/4C spinach on the bottom

  10. 1 Slice of eggplant

  11. 1/8C Pasta sauce

  12. 1/2TBSP ea of mozz and parm cheese

  13. 1 eggplant slice

  14. 1/8C pasta sauce

  15. top with 1/2Tbsp ea of mozz and parm cheese

  16. Microwave for 30 seconds, or until cheese on top is melted, make sure spinach on bottom is heated.

  17. Enjoy!

  18. *Portions are small, would be best served alongside a salad and breadsticks to fill the rest of the plate
