Based on the American Heart Association recipe -- I used mushrooms as sauce filler rather than artichokes (hearts of palm also work fine, btw)

Recipe Ingredients for Eggplant Parmesan w/Mushroom Sauce

1 1/2 lb eggplant
15 oz tomato sauce
5 1/2 oz tomato paste
280 g portabella mushrooms
10 oz mori-nu lite silken tofu
1/2 c egg beaters
1 oz parmesan cheese
1/3 c bread crumbs
1 tbsp oregano or italian herbs
1 tsp garlic powder
4 oz mozzarella cheese part skim

Recipe Directions for Eggplant Parmesan w/Mushroom Sauce

  1. Peel and slice eggplant into 1/4" slices.

  2. Bake/broil the slices until just slightly brown and somewhat tenderized.

  3. Blend tomato sauce, tomato paste, and mushrooms in a food processor.

  4. Add spices

  5. Blend the eggbeaters and tofu together until smooth

  6. Layer into pan: 1/3 sauce, 1/2 eggplant slices, 1/3 sauce, mozzarella, tofu-egg mix, rest of eggplant, rest of sauce.

  7. Mix parmesan and bread crumbs and sprinkle on top

  8. bake for about 35-40 minutes at 350 degrees.
