Low Fat method of eggplant parmesan. No frying Eggplant

Recipe Ingredients for Eggplant Parmesan, (Low Fat)

32 ounce Pasta Sauce
1 large eggplant, sliced
10 oz mozzarella cheese, shredded

Recipe Directions for Eggplant Parmesan, (Low Fat)

Slice eggplant in 1/4 inch slices and steam for 7 - 8 minutes. Spray casserole dish w/pam then put some pasta sauce in bottom. Next layer eggplant, cheese then repeat layers. Cover and cook 350 for about 45 minutes.
