Recipe Ingredients for Eggplant parmesan lasagne

3 1/2 oz Pasta
1 eggplant
2 cups mozzarella, part skim
12 1/2 oz cottage cheese, 1% milkfat
1 1/2 cups tomato sauce
5 g parmesan cheese

Recipe Directions for Eggplant parmesan lasagne

  1. Slice eggplant 1/4 inch thick and roast at 425 deg until pliable, about 20 min

  2. Cook noodles according to directions

  3. Layer sauce, noodles, cottage cheese, eggplant slices, and mozzarella, ending with sauce and last of mozzarella

  4. Sprinkle parmesan cheese on top, then bake at 350 deg for 30 min or until bubbling
