Recipe Ingredients for Eggplant Parmesan, fm The Ultimate Italian Cookbook

2 lb Eggplant
1 T. oil for frying
1/3 c. parmesan cheese
2 c. mozzarella cheese
1 t. salt
1/4 t. pepper
4 T. olive oil
2 medium onion
2 clove garlic
12 oz tomato sauce
1/2 t. salt
1/8 t. pepper
1 t. fresh basil
2/3 c. soy beans
1 c. kale

Recipe Directions for Eggplant Parmesan, fm The Ultimate Italian Cookbook

  1. Wash and slice the eggplants. Salt and leave for an hour to drain.

  2. Meanwhile, make the spaghetti sauce with the last six ingredients. Saute the onions in the olive oil, add garlic, cook with spaghetti sauce (or tomatoes), season with salt and pepper and basil or parsley.

  3. Cook for 20-30 minutes and then put through a food processor to blend.

  4. Pat the eggplant slices dry, coat lightly with flour and fry them over medium heat in a little oil, covered until soft and then flip to the other side.

  5. When you've got all your eggplant done, layer the eggplant with mozzarella cheese and sauce.

  6. JF is adding other veggies to the sauce. Cook for about 45 minutes in an oven at 350 degrees.
