A traditional eggplant dish with parmesan, from Italy.

Recipe Ingredients for Eggplant & Parmesan Bake

800 g tinned tomatoes, chopped
2 cloves garlic
4 tablespoons olive oil
3 eggplants, sliced
3 eggs, beaten
1/2 cup flour
250 g parmesan cheese, freshly grated
250 g mozzarella
1 teaspoon salt
1/2 teaspoon pepper

Recipe Directions for Eggplant & Parmesan Bake

  1. Heat the oven to 200C.

  2. Put the chopped tomatoes with the garlic, half the olive oil into a saucepan, season with salt and pepper and put uncovered onto a low heat for about 20 mins.

  3. Slice the eggplants into 1cm discs, dust with flour, dip in beaten egg and fry till golden brown in a lightly oiled pan. Place on a piece of kitchen towel until all are done.

  4. Put the sauce through a sieve, pushing through all the sauce till only the pips remain.

  5. Put a few tablespoons of tomato sauce on the bottom of a casserole dish. Place a layer of eggplant on the dish, ladle on half the sauce, place half the parmesan and mozzarella on top. Repeat then place in the oven for 20 minutes till golden and bubbling.
