Recipe Ingredients for Eggplant Parm

3 eggplant
2 eggs
4 cups bread crumbs
48 oz ragu
1 cup mozzarella
1/2 cup parmasan cheese

Recipe Directions for Eggplant Parm

  1. peel and slice eggplant

  2. beat eggs. dip slices in egg and crumbs. Bake for 5 minutes at 350 for 5 minutes on each side.

  3. Then layer in a 9x13 inch baking dish, sauce, slices, mozza, parm, repeat.

  4. Bake for 35 minutes until golden brown
