Recipe Ingredients for Eggplant Parm

10 oz spaghetti
20 oz tomato sauce
2 1/2 oz mozzarella, part skim
1/4 cup bread crumbs
15 leaves basil

Recipe Directions for Eggplant Parm

  1. peel eggplant and cut in 1" slices. Spray both sides of eggplant with no calorie cooking spray, then dredge in the bread crumbs. Place is 13x9 baking dish (single layer) bake for 20 minutes at 350. Eggplant should be soft but not mushy.

  2. Boil water for spaghetti. Add sauce and mozzarella to baking dish over eggplant. Cook the spaghetti for about 10 minutes at a rolling boil.

  3. Drain spaghetti. Remove eggplant from oven. Top spaghetti with eggplant. Garnish with fresh, shredded basil.
