Not recommended as a low cal meal, just trying to figure out the count for a dinner party. It's delicious if you can spare the cals or eat a very small piece.

Recipe Ingredients for Eggplant Parm

3 oz pine nuts
1 cup parmesan
1 cup vegetable oil
2 cups bread crumbs
2 eggplants
2 cups mozarella
2 oz goat cheese
2 oz gorgonzola
2 cups Pasta Sauce

Recipe Directions for Eggplant Parm

  1. dip eggplant in egg & breadcrums and fry in oil

  2. toast pine nuts

  3. layer eggplant, cheese, sauce and nuts in a casserole dish

  4. heat at 350 until the cheese is all gooey/melted/bubbly (you can also sub any other cheeses in that you might think are good, but the goat cheese is what makes this extra tasty)

  5. cut out a small piece and fill up on salad!
