Homemade eggplant parmesan, mmmm - Italian comfort food at it's finest!

Recipe Ingredients for Eggplant Parm

0.27 cup Olive Oil
1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
4.5 oz Mozzarella, Part Skim Milk Cheese
4 serving Spaghetti Sauce No Added Sugar
0.25 cup Buttermilk
10 tsp Parmesan 100% Grated

Recipe Directions for Eggplant Parm

Peel and slice eggplant. Place in colander sprinkled w/ salt for 30 min. Rinse, pat dry. Dip into buttermilk then into flour/parm cheese mixture. Fry in olive oil. Put 1/4 c of sauce on bottom of casserole. Place a layer of eggplant on sauce, sprinkle w/ mozzarella, then sauce, then eggplant, cheese, sauce. Bake at 425 till browned and bubbly. Enjoy!
