Fresh eggplant is best. All this is baked, not breaded or fried.

Recipe Ingredients for Eggplant Parm - John

2 eggplants
1/2 cup extra virgin olive oil
4 cups mozzarella cheese
2 tablespoons oregano
24 tomatoes
2 red peppers
1 onion
1/2 cup breadcrumbs
2 tablespoons Parmesan cheese

Recipe Directions for Eggplant Parm - John

  1. Roast tomatoes, onion, red peppers. Add salt and pepper. Combine in blender or food processor.

  2. Peel eggplant. Slice into 1/2 inch slices.

  3. Bake slices of eggplant in oven at 350 with drizzle of olive oil.

  4. Layer eggplant slices, cheese, and sauce.

  5. Top with Parmesan cheese and breadcrumbs.

  6. Bake at 350 for 20 minutes.
