Yummy eggplant parm, healthy style. If you need bread crumbs, try topping with a few crushed Herb All-Bran crackers.

Recipe Ingredients for Eggplant Parm in a Bowl

1 medium eggplant
1/2 cup basil leaves
1/4 cup onion
1 cup cooked tomatoes
2 cloves garlic
1 tsp garlic powder
1/2 tsp black pepper
1/8 tsp red pepper
1/2 cup chicken broth
3 oz fat free feta cheese
2 1/2 oz

Recipe Directions for Eggplant Parm in a Bowl

  1. Boil eggplant with 1/2 cup water until softened.

  2. Add tomatoes, garlic, spices, and onion. Cook until fragrant, and eggplant is desired texture.

  3. Top each bowl with cheddar cheese and feta cheese, and additional basil if desired. You can heat each bowl about 20 seconds in the microwave to melt the cheese if desired!
