Recipe Ingredients for Eggplant omelet

1 cup eggplant
1/2 cup tomato
1 tablespoon onion
1 teaspoon garlic
1 salt
1 pepper
1/2 egg
1 teaspoon sunflower oil
1 teaspoon dill

Recipe Directions for Eggplant omelet

  1. roast and peel eggplant, dice

  2. saute tomato,onion and garlic in oil

  3. add eggplant and let cook for 2 minutes

  4. beat egg and add to pan

  5. add dill

  6. mix and cook until egg is done

  7. add salt and pepper to taste
