Thick & chunky Mediterranean pasta sauce

Recipe Ingredients for Eggplant & Olive sauce

3 eggplants, diced
2 medium white onions, diced
84 oz diced tomatoes
3 tbsp tomato paste
9 1/2 oz kalamata olives
2/3 cup olive oil
4 cloves garlic, minced

Recipe Directions for Eggplant & Olive sauce

  1. Toss eggplant with 1 tbs salt in large colander. Set colander over bowl; let stand 30 min to allow excess liquid to drain from eggplant. Using paper towels, pat eggplant dry.

  2. Heat oil in heavy large pot over medium high heat. Add eggplant onions and garlic; cook until eggplant is almost tender and beginning to brown, stirring often, about 15 min. Add rosemary, cook 1 min. Add tomatoes with juices and tomato paste. Simmer uncovered until flavors blend and sauce thickens slightly, stirring occasionally, about 15 min. Mix in olives and simmer 5 min longer. Season sauce to taste with salt and pepper.
