Recipe Ingredients for eggplant noodle salad

10 oz Squash, Summer, Zucchini, Includes Skin
10 oz Eggplant
5 oz Bell Pepper Red
2 tbsp Olive Oil
2 oz Onions, Spring Or Scallions
6 oz Mangos
8 oz Tomatoes, Red, Ripe
1 NLEA serving Limes
1 tbsp Oil, Sesame
4 oz Cilantro
3 cloves Garlic
4 serving Crushed Red Pepper
1 serving Soy Sauce
8 oz Organics Brown Rice Pasta Spaghetti

Recipe Directions for eggplant noodle salad

  1. Roast diced eggplant, zucchini, bell pepper and garlic (tossed in olive oil) at 400F for 25 minutes, stirring every five or ten minutes.

  2. Prepare pasta according to package.

  3. Pulse cilantro, mango, tomato, green onion, sesame oil, crushed red pepper and soy in food processor until the consistency of a sauce or gazpacho.

  4. When noodles and vegetables are done, toss with sauce and chill for at least one hour before serving.
