1/2 onion, 1/2 cup peppers, 11/2 cup eggplant sliced, 1 1/2 cup mushrooms sliced, 3-4 garlic cloves; 1/3 cup of sun dried tomato all stir fried in 2 s. oil. Soy sauce added and vegeta and salt.

2 tbsp Extra Virgin Olive Oil
1.5 cup (1" cubes)(99 g) Eggplant

Recipe Directions for Eggplant & mushroom stirfry

Mix all ingredients and stir fry. Garlic and sun dried tomato add a little later. Soy sauce and salt add at the end. Enjoy!
