Recipe Ingredients for Eggplant, Mushroom and Goat Cheese

3 T Olive Oil
1 onion, chopped
2 cloves garlic, sliced
8 ounce mushrooms, sliced
1 eggplant, cubed
1/4 cup tomato, crushed
1/2 cup chicken broth
1 tsp thyme
1 1/2 tsp salt
4 ounces goat cheese

Recipe Directions for Eggplant, Mushroom and Goat Cheese

Heat olive oil in large saute pan over medium low heat. Saute onion and garlic until soft and translucent, about 5 minutes. Increase heat to medium high. Stir in mushrooms, cook until lightly browned, 5 min. Stir in eggplant, cook 5 minutes. Stir in tomatoes, chicken broth. Season with thyme, salt. Bring to boil. Simmer 20 min or until eggplant is tender. Toss with goat cheese.
