Eggplant Mozzerella Feta Tomato Sauce

Recipe Ingredients for Eggplant Mozzerella Feta Tomato Sauce

1 large eggplant
4 oz mushrooms sliced
2 large tomatoes
4 oz tofu
4 oz mozzerella
2 oz feta
1 tbsp garlic powder
1/2 teaspoon salt
1 teaspoon fresh basil
16 oz tomato sauce
4 oz olive oil

Recipe Directions for Eggplant Mozzerella Feta Tomato Sauce

  1. cut eggplant into cubes

  2. wash mushrooms

  3. slice tomatoes

  4. spread cut veggies into flat roasting plan

  5. drizzle olive oil

  6. stir to coat mixture with garlic powder, salt and fresh basil

  7. cut tofu into cubes

  8. slice mozzerella

  9. spread crumbled feta, sliced mozzerella and tofu cubes on top of vegetable mixture

  10. cover all of it with tomato sauce

  11. bake at 400 for 45 minutes

  12. turn off oven

  13. leave in oven for another 15 minutes
