Recipe Ingredients for Eggplant Mozzarella

8 oz mozzarella
3 cups (ragu) pasta sauce
2 med eggplant
1 cup green peppers
1 cup onions
1 block tofu
3 tsp olive oil

Recipe Directions for Eggplant Mozzarella

  1. Boil eggplant until soft

  2. Fry using spray oil [I used olive oil as an estimate]

  3. Fry peppers and onions too

  4. layer in pan

  5. squeeze all water out of one block of tofu and crumble

  6. layer that

  7. add spaghetti sauce

  8. add cheese

  9. Bake at 400 until cheese is browning on top
