Eggplant with Mozzarella in an Italian style sauce.

Recipe Ingredients for Eggplant with Mozarella

1 serving Extra Virgin Olive Oil
1 cloves, raw Garlic
0.5 medium (2-1/2" dia) Onions
0.5 cup, cubes Eggplant
2 oz Cheese
0.5 cup Tomato Sauce
1 tsp, ground Basil, Dried
1 serving Premium Selection Italian Seasoning
2 tsp Cheese
1 dash Salt, Table
1/4 tsp Spices Whole Black Pepper
0.5 cup, diced Mushrooms, Portabella

Recipe Directions for Eggplant with Mozarella

  1. Prep:

  2. Dice onion, cut a slice of egg plant, smash and slice garlic, finally slice a piece of mozarella, dice the portabella.

  3. Cook:

  4. 1. Put olive oil in skillet and roast the garlic.

  5. 2. Add: onion, portabella, salt, and pepper. Cook until soft.

  6. 3. Add egg plant and spices.

  7. 4.When eggplant starts to turn brown, separate the other ingredients into a sauce pan and add the tomato sauce and simmer.

  8. 5. In the same pan as the egg plant add the mozzarella and start to cook it.

  9. Serve with the sauce on top of egg plant and cheese, and add the Parm Romano cheese on top (if desired)
