2 large Zuchinni
2 tbsp. Miso Paste
2 tbsp. Mirin
1 tbsp. Sugar
1 tbsp. Soy Sauce
2 tbsp. Oil

Recipe Directions for Eggplant Miso

  1. Combine Miso, Mirin, Sugar, Soy Sauce in a bowl.

  2. slice eggplant and squash

  3. heat oil in the pan

  4. Add eggplant and squash

  5. add miso sauce, cover and simmer til tender
