Eggplant and other veggies in a tomato sauce base

Recipe Ingredients for Eggplant medley

1 medium eggplant, peeled and diced
1/2 cup chopped onion
2 cloves garlic
1 cup chicken broth
1 tomato
1/2 cup tomato sauce
1/2 cup chopped peppers
1 tbsp olive oil
1/4 cup parmesan cheese

Recipe Directions for Eggplant medley

  1. Saute onion, garlic and peppers in olive oil

  2. Add eggplant, tomato, tomato sauce and broth

  3. Season to taste

  4. Simmer

  5. Sprinkle with a little parmesan cheese when serving
