Recipe Ingredients for Eggplant Medley

1 cup eggplant, pre-cooked and cubed
1/2 cup peppers
1/2 cup mushroom pieces
1 tsp olive oil
1 tbsp parmesan cheese (optional)
1/8 tsp garlic powder
1/8 tsp pepper
1/4 cup Tomato sauce

Recipe Directions for Eggplant Medley

  1. Cut a small eggplant in half lengthwise, score into cubes and around skin. Do not seperate from skin.

  2. Baste with olive oil and grill/broil until skin shrivles and flesh is soft to touch.

  3. add rest of olive oil to fry pan and heat

  4. cut peppers into small strips, then dice. Red, green, yellow or any one kind of pepper works fine.

  5. Heat peppers until part soft and add 1/2 cup of mushroom pieces or slices to pan

  6. season with pepper and garlic powder

  7. remove eggplant from skin and add to mixture

  8. add tomato sause and parmesan cheese

  9. stir gently until blended

  10. Makes about 1 - 1 1/2 cups depending on size of eggplant
