2 oz butter
2 cups chicken broth
2 tbsp flour
400 g onion
110 g center cut bacon
4 oz mozzarella cheese
4 oz provolone cheese
4 cloves garlic

Recipe Directions for Eggplant Layers w/ Bacon & Onions

  1. Chop the peeled eggplant

  2. Make a bechamel with half the butter and the broth

  3. Fry the onions and bacon and the garlic

  4. Arrange in layers

  5. Bake covered for 1 h at 350, then for 15 minutes uncovered

  6. Let stay for 5 minutes
