Recipe Ingredients for Eggplant Lasagna Rolls

1 serving Baked Eggplant
1/4 cup Cheese
1/2 cup Food You Feel Good About Pasta Sauce
1 serving Grade AA Eggs
2 cloves, raw Garlic
0.25 medium raw Onion Red

Recipe Directions for Eggplant Lasagna Rolls

Mix ricotta cheese, egg, parsley, onion and garlic in a small bowl. Slice eggplant lengthwise about 1/4 inch thickness. Grill Eggplant so that it becomes soft to roll. Place sauce and cheese on eggplant and roll and place in pan with sauce over rolls and a lil parm. or goat cheese if you want. Bake until cheese melts on top and center of roll is cooked.
