Recipe Ingredients for Eggplant Lasagna

1 cup, cubes Eggplant
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
4 oz Fresh Ground Turkey - Lean
1 tbsp chopped Onions
1 clove Garlic
1 serving Tomato Puree
1/4 cup Part-Skim Ricotta Cheese
1 serving Mozzarella

Recipe Directions for Eggplant Lasagna

Brown ground turkey. Add tomato puree and seasonings. Slice eggplant, zucchini and summer squash thin lengthwise. Layer in a 9x13 pan. Bake at 375 for 45-60min
