1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
6 medium raw Plum Tomato
16 oz Ground Turkey
1 pieces Garlic Cloves
4 oz Mozzarella, Part Skim Milk Cheese
1 cup Ricotta, Part Skim Milk Cheese
128.128 oz Crushed Tomatoes

Recipe Directions for eggplant lasagna

slice and bake eggplant till tender. brown ground turkey. Blanch tomatoes, peel and chop. layer all ingredients with mozz cheese on top layer. bake for 30 min or till bubbly.
