Recipe Ingredients for Eggplant Lasagna

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
112 grams Mushrooms, Portabella
24 oz Signature Recipes Pasta Sauce
1 cup 6 Cheese Italian Shredded Cheese
1/2 cup Spinach

Recipe Directions for Eggplant Lasagna

Slice eggplant lengthwise into 1/4 slices. Salt, rinse and pat dry. Divide ingredients in half and, starting with a layer of sauce, layer on eggplant, mushrooms spinach, half the remaining sauce, cheese and repeat. Bake at 400 until golden brown and cooked through.
