Eggplant Lasagna Recipe

The recipe called for 2 jars of tomato sauce. This is way too much to my taste. Use what you like, but add the calories.

Recipe Ingredients for Eggplant Lasagna

1 eggplant
1 onion
2 cups tomato sauce, no sugar added (Classico Tomato Basil)
1 pound fresh mushrooms
2 cups shredded mozzarella cheese
8 oz. mozzarella cheese, block
1 T. butter

Recipe Directions for Eggplant Lasagna

  1. Cut off top and bottom of eggplant, and peel off the purple skin and slice into thin slices like you would a tomato.

  2. Sautee the sliced eggplant in the skillet. Use pam or olive oil in the skillet. The slices should get a little brown around the edges. Remove from skillet and set aside.

  3. While sauteeing the eggplant, dice up the onion and mushrooms.

  4. Slice the block of mozzarella cheese and set aside.

  5. Pour some sauce into the tottom of the baking dish; just enough to cover the bottom.

  6. Put a layer of sauteed eggplant on top of the sauce, then a layer of cheese from the block.

  7. Stop and get back to your skillet.

  8. Put a pat of butter in your skillet and saute onions and mushrooms until onions are transparent.

  9. Add the rest of the sauce to the skillet.

  10. Now make another layer in the baking dish.

  11. Spoon a thin layer of sauce in the baking dish.

  12. Add another layer of eggplant and block cheese if you have any left.

  13. Add the rest of the sauce and cover with shredded cheese.

  14. Bake at 350 degrees for 45-60 minutes, making sure the cheese is melted throughout.

  15. Put foil under the pan for spills.
