Great lasagna replacing the pasta with eggplant and zucchini.

Recipe Ingredients for Eggplant Lasagna

2 cups Mozzarella, Part Skim Milk Cheese
2 zucchini
1 eggplant
1 lb extra lean ground turkey
1 lb lean ground turkey
1/2 white onion
4 cups spicy red pepper sauce
1 lb nonfat cottage cheese
2 cloves garlic

Recipe Directions for Eggplant Lasagna

  1. Cook ground turkey, onion and garlic and break up into small pieces. One cooked add the tomato sauce.

  2. Slice zucchini and eggplant to make sheets. sprinkle salt on each side and let sit to draw out water.

  3. Put down a layer of eggplant in baking dish. Spread a layer of ground turkey mix. Then a layer of cottage cheese, spread thin. Then a layer of zucchini. Repeat layers until out of room in dish. Top with mozzarella.

  4. Bake in oven at 375 for 25 mins, or until cheese starts to bubble.
