Eggplant Lasagna Recipe

Eggplant lasagna from the Rachael Ray show, a little altered for what I had in the cupboards.

Recipe Ingredients for Eggplant lasagna

74 g onion
2 cloves garlic
2 teaspoons oil
170 g cottage cheese
220 g cheese
3 egg yolks
550 g eggplants
400 g pasta sauce

Recipe Directions for Eggplant lasagna

  1. Fry off the onion and garlic til clear.

  2. Add pasta sauce and combine well, cooking until thickened.

  3. Fry the eggplant slices in another pan until golden and set aside for assembly.

  4. Mix the cottage cheese, grated cheese (I used Edam, and leave a handful for the top of the lasagna), and the egg yolks in a bowl and set aside.

  5. Layer everything into the lasagna dish, starting with sauce, then eggplant slices, then half the cheese mix, then do it all again, and sprinkle with the last of the grated cheese.

  6. Bake in 180C oven until nice and golden brown.
