Use eggplant strips instead of lasagna noodles

Recipe Ingredients for Eggplant Lasagna

8 cups eggplant
2 cup low fat cottage cheese
1 cup ricotta cheese
1/2 cup parmesan cheese
1 cup spinach
1 cup broccoli
1/2 cup red pepper
1/2 cup mushrooms
1 cup egg beaters
1 cups tomato puree
1/2 cup onion
1/4 cup garlic
2 oz tofu

Recipe Directions for Eggplant Lasagna

  1. Cut eggplant in thin strips. 1/4" thick

  2. Mix cheeses and brocolli, spinach, mushroom, egg beaters.

  3. Pour 1/2 cup tomato sauce in 10x13 casserole.

  4. Layer eggplant with cheese mixture

  5. top with 1/2 cup tomatoe sauce and bake in oven uncoverd for 1.5 hours at 350' I listed tofu here because I use Morning star meal scrambles in the sauce for protein. The sauce part of this recipe is an estimated .
