Eggplant, sliced thin replaces pasta

Recipe Ingredients for Eggplant Lasagna

1 large eggplant
2 cups marinara sauce
1 cup mozzarella cheese
2 oz romano cheese
15 oz ricotta cheese
2 oz black olives, sliced
4 tomatoes

Recipe Directions for Eggplant Lasagna

  1. Heat over to 400 degrees F. Peel and thinly slice one large eggplant, lengthwise. Bake eggplant slices in oven for 15 minutes.

  2. Coat glass baking dish and place one layer of eggplant in dish. Spoon marinara sauce over eggplant. Thinly slice tomatoes and place on top of marinara sauce. Thinly coat tomatoes with ricotta cheese. Sprinkle grated mozzarella and romano blended cheese on ricotta cheese. Repeat three times.

  3. Bake for 20 minutes. Broil to make the cheese golden brown. Adding Italian spices during placement of layers adds additional flavor. Cool a few minutes and serve. Recipe has a lot of liquid due to use of fresh tomatoes.
