Eggplant Lasagna Recipe

I serve with a large garden salad and my husband will have a homemade roll brushed with garlic and butter while ill have a small piece of fruit.

Recipe Ingredients for Eggplant Lasagna

1 eggplant
3 tbsp parmesan cheese
1 cup diced canned tomatoes
1/8 cup basil
2 cups baby spinach
3 cloves garlic
1 tbsp olive oil
160 g Portobello Mushrooms
1/2 cup shredded carrot
1/3 cup mozzarella

Recipe Directions for Eggplant Lasagna

I grill slices of eggplant until soft and then set aside. I sauté each vegetable separately with a little crushed garlic and oil then set aside in separate containers. I make the sauce by blending 1 tbsp on the parm. cheese with the tomato and basil and then heat in small sauce pan until simmering. to assemble i layer a little sauce, eggplant slices 1/2 of the spinach, 1/2 of the carrots, 1/2 of the mushrooms. and 1 tbsp of parmesan sprinkled on top and a little sauce, cover with eggplant slices and repeat, cover with final eggplant slices, top with sauce and then mozzarella. I bake at 350 for around 15 minutes until everything is heated through and the cheese is bubbly.
