Recipe Ingredients for Eggplant Lasagna

3 eggplants, sliced 1/4 "
15 oz. fat free ricotta cheese
1 egg
20 g. pecorino romano cheese, grated
1/4 c. parsley
48 oz. Roasted Garlic Pasta Sauce
3 c. mozzarella cheese, shredded
1 oz. pecorino romano cheese, grated

Recipe Directions for Eggplant Lasagna

  1. Salt and drain eggplant in colander for 30 min. Drain and blot on paper towels. Preheat oven to 450. Spray baking sheets with olive oil Pam and place eggplant on pan in single layer. Spray tops with Pam and bake about 20- 30 minutes until slightly brown, turning partway through.

  2. Mix next 4 ingredients and add salt and pepper to taste. Grease 9x13' pan and spread a little sauce on bottom. Layer 1/3 eggplant, 1/3 ricotta mixture, 1/3 sauce and 1/3 mozzarella. Continue two more layers, omitting the last cheese layer. Cover with foil and bake 30 min. at 400. Remove foil and top with mozzarella and remaining romano cheeses. bake until cheese is melted, about 10 min. Remove from oven and let stand for 15 min. or more before cutting into 8 pieces.
