Classic Lasagna recipe with eggplant slices.

Recipe Ingredients for Eggplant Lasagna (with Lasagna noodles)

10 serving Lasagne noodles
24 oz. Mozzarella cheese , shredded
12 cups of eggplant , about 2 large eggplants peeled and thinly sliced
6 cups Marinara sauce , which is 2 26 oz. jars

Recipe Directions for Eggplant Lasagna (with Lasagna noodles)

  1. Cook lasagna noodles, omitting salt. Set aside.

  2. Peel and thinly slice eggplants. Pile slices on a very lightly oiled cookie sheet, cover with aluminum foil and cook in oven at 400 degrees for 15 minutes.

  3. In casserole dish, spoon about 1/4 cup of marinara sauce and put down layers of noodles, cheese, eggplant slices, and marinara sauce. Put a layer of noodles on top, topped with a thin layer of marinara sauce and cheese.

  4. Preheat oven to 350. Bake for 30-40 minutes.
