Easy to make, nourishing and a tasty side dish, goes well with rice or chapati

Recipe Ingredients for Eggplant kootu

1 eggplant, peeled
1/2 cup lentil
1 salt to taste
1/2 tsp oil
1/4 tsp black bean
1/4 tsp mustard
1/16 tsp turmeric, powder
1 tsp chili powder

Recipe Directions for Eggplant kootu

  1. cook the lentil dal; keep aside.

  2. chop eggplant into small pieces, cook till tender.

  3. add the dal, salt, turmeric powder and chili powder

  4. mix well, reduce flame and simmer for five minutes.

  5. heat oil, add mustard seeds, let splutter, add the black beans, allow them to turn golden brown, then add to the kootu.

  6. serve hot with chapatis or rice.
