Baked casserole with double layered sliced eggplant between marinara sauce and cheeses. Modified from Kitchen Aid Food Processor cookbook.

Recipe Ingredients for Eggplant Italiano

1 ea eggplant, peeled
3 oz mozzarella, shreadded part skim reduced fat Sargento
1/4 c parsley, fresh loosely packed
8 oz ricotta fat free Sargento
1/2 c Parmesan grated
1 lg egg white, slightly beaten
1/4 tsp black pepper
2 c marinara sauce, Newman's Own

Recipe Directions for Eggplant Italiano

  1. Using slicing/shredding disk, slice eggplant, cutting to fit feed tube. If you cut it by hand, cut it thin.

  2. Reverse disk to shread mozzarella or purchase it already shreadded.

  3. Chop parsley and in small bowl and combine with ricotta, Parmesan, egg white, and pepper.

  4. Spray 9 x 13 x 2 baking dish with non-stick spray.

  5. Pre-heat the oven to 350 degrees F.

  6. Pour 1 cup of spaghetti sauce into baking dish, cover with half of the eggplant. Spread with ricotta mixture. Cover with remaining eggplant and then with remaining sauce. Top with sprinkled mozzarella cheese.

  7. Bake for 35 to 45 minutes, until eggplant is tender.
