Grilled eggplant with spinach/roasted red peppers and hummus

Recipe Ingredients for Eggplant-Hummus Steaks - Rachel Ray inspired

2 medium eggplant
1 tablespoon Extra-virgin olive oil
20 ounce frozen spinach
2 roasted red peppers
2 tablespoons capers
2 cloves garlic
16 ounces hummus
3/4 cup bread crumbs
1/4 cup fresh flat-leaf parsley

Recipe Directions for Eggplant-Hummus Steaks - Rachel Ray inspired

  1. Heat oven to 400 degrees F.

  2. Cut eggplant into 1" steaks

  3. Brush the eggplant steaks lightly with EVOO, season liberally on both sides with salt and pepper.

  4. Grill 3 to 4 minutes for small eggplant and 4 to 6 minutes for large eggplant, turning occasionally, until the steaks begin to become tender but are not fully cooked.

  5. Defrost spinach in microwave 7 to 8 minutes.

  6. Heat 1 tablespoon extra-virgin olive oil in a skillet and add roasted peppers, garlic and capers

  7. Squeeze the spinach dry and separate as you add it to the skillet.

  8. Season the spinach with salt and pepper and heat through.

  9. Place the eggplants on baking sheets. Top with spinach mixture.

  10. Spread hummus evenly across the steaks on top of the spinach, covering it completely in a thin layer.

  11. Toss the bread crumbs with 2 tablespoons extra-virgin olive oil and parsley.

  12. Scatter over the steaks on top of the hummus.

  13. Bake to brown bread crumbs, 5 minutes or so.
