Recipe Ingredients for Eggplant Hummus

1 medium eggplant
15 oz canned garbanzo beans
1/3 cup water
2 tablespoons tahini
2 tablespoons fresh lemon juice
1 tablespoon minced onions
4 cloves garlic, finely chopped

Recipe Directions for Eggplant Hummus

  1. Bake eggplant at 350 degrees for 45 minutes. Let cool.

  2. Blend all ingredients, including baked, peeled eggplant, in a food processor or high powered blender until smooth and creamy
