A little too high in fat and sodium, but otherwise, good for you. Cut fat by using fat free ricotta, less cheese, go without olive oil. Cut sodium by using low sodium marinara.

Recipe Ingredients for Eggplant and Ground Beef Lasagna

1 eggplant, medium sized
1 onion, yellow, chopped
8 oz. beef, ground, 95% lean
4 oz. mozzarella, part-skim
1 1/2 cups organic marinara sauce
8 oz. egg beaters
5 oz. parmesan, shredded cheese
4 tablespoons extra virgin olive oil
1 tablespoon thyme
1 tablespoon parsley
3 tablespoons basil, fresh, chopped
1/4 teaspoon crushed red pepper
4 sprays Pam

Recipe Directions for Eggplant and Ground Beef Lasagna

  1. Slice eggplant, lay in colander over sink, sprinkle with salt, let sit for 5 min.

  2. Rinse eggplant, pat dry.

  3. Brush eggplant with olive oil and thyme.

  4. Place on cookie sheet, in oven at 375 degrees.

  5. Allow to brown on both sides, set aside.

  6. Meanwhile, on medium-high heat, brown ground beef, add onion, garlic, dash crushed red pepper, basil. Add 1/2 jar of marinara, simmer.

  7. Then put 1/2 tub of ricotta in bowl, mix egg beaters and parsely.

  8. Spray 9 in. square baking pan with Pam.

  9. Layer ground beef mixture, sprinkle with mozarella and parmesan, then layer eggplant, then ricotta mixture.

  10. Repeat until out of mixtures.

  11. Bake at 375 for approx. 25-30 min. or until bubbly.
