Tasty and healthy. Add cheese or a poached egg for a complete meal. Or serve it with pasta. Great left-overs for lunch!

Recipe Ingredients for Eggplant Gratin

1.5 eggplant, peeled (yield from 1-1/4 lb) Eggplant
3 tbsp Olive Oil
1 plum tomato Tomatoes, Red, Ripe
0.5 cup, crumbs Bread, White, Commercially Prepared
4 clove Garlic

Recipe Directions for Eggplant Gratin

Peel tomatoes and eggplant. Slice tomatoes 1/4" thick and eggplant 1/8" thick. Mince garlic and mix with 1/3 cup chopped flat-leaf parsley. preheat oven to 400 degrees. Brush 1/2 T. olive oil in wide shallow baking dish, then sprinkle with 1.5 T. bread crumbs. Put in layer of tomatoes, season with s&p & 1 tsp. herbs de provence. Add layer of eggplant and sprinkle with half of the parsley/garlic. Add another layer of tomatoes with s&p & herbs. Then the last of the eggplant, parsley and garlic. Top with final layer of tomatoes and seasonings,then drizzle with remaining olive oil. Bake for 50 to 60 minutes. May be eaten hot, room temp or cold.
